
Underwater Refinement? Jamin Portofino Launches Crowdfunding to Develop Research and Markets
Deep-sea refinement is now a widespread reality in Italy – at sea as well as in Alpine lakes – and in France where both French and Brazilian sparkling wines are developed in Brittany. Jamin Portofino , the first company in Italy for the underwater cellaring of wines produced by different labels that approaches research on conservation at sea with a scientific method, launches its first equity crowdfunding campaign on Mamacrowd , the main Italian platform in the sector in terms of capital raised. The goal of the campaign , which will be online from June 10 and aims to raise 600 thousand euros, is to: increase research and development activities , thanks to the agreement signed with DAGRI University of Florence, expand services to wineries and create the “list” of UnderWaterWines wines .
Furthermore, thanks to the widespread shareholding tool that is crowdfunding, Jamin aims to consolidate its presence on the international market, thus bringing the Italian experience of underwater winemaking abroad and will also be able to develop technologies in the field of anti-counterfeiting: the company is in fact developing chips and blockchain encryption to protect the uniqueness and origin of each bottle deposited on the seabed .
The scientific community as well as high-end sommeliers and quality restaurants have shown great interest in this innovative trend in the world of winemaking. The market itself has responded positively , with an exponential increase in demand that has allowed us to close in profit from the first year.
Jamin , which entered the market in 2018, represents a novelty in the international wine scene, in fact it is the only company to have filed an international patent on UnderWaterWines, creating the first Champagne AOP UnderWater , refined in iso-pressure conditions in the protected seabed of Portofino at -52 meters. This innovative method allows the wine, underwater, to evolve its characteristics thanks to unique physical factors, some of which are difficult to reproduce in the cellar, such as pressure, motion of sea currents, constant temperature and absence of light. Furthermore, this technique allows the unmistakable characteristics of individual wines to be preserved unchanged for longer , an aspect of primary importance especially in the current pandemic context in which cellars suffer from numerous unsold wines.
