Winemaking

Aging of the grapes on racks for 60 days and manual destemming grape by grape. Pressing with feet, spontaneous fermentation and 28 days of maceration on the skins. Rest for a year in pear and cherry wood barrels, blending and static decantation in steel. Refine for 2 months in the bottle.
