The grapes come from a single vineyard with an area of about 4000 m2, located in the Monte di Portofino area.

Winemaking

Soft pressing of the grapes and fermentation in stainless steel at low temperature. Maturation for 5 months with aging on the lees and weekly bâtonnage. Bottle aging for 60 days.
Aged for 180 days at a depth of 52 meters in Cala degli Inglesi, within the Protected Marine Area of Portofino, following the patented method developed by Jamin UWW.
