Winemaking

Cold maceration of the grapes for 3 days, soft pressing and fermentation in steel at low temperature. After racking, the transfer takes place in 1000-liter perpetual barrels, where it rests for about 8 months, following the traditional technique of topping up, used in Marsala before the arrival of the English. Bottle aging for 6 months.
