Le bottiglie vengono stivate sul fondale marino del mare adriatico ad una profondità di 25/30 metri in gabbie di acciaio inox. Grazie all’isobara la temperatura è costante intorno ai 10/13°C, e l’emersione avviene dopo un periodo variabile da un minimo 6 fino a 12/18 mesi in base alle condizioni marine e alla stagione.

Le attese non sono poi tradite all'olfatto dove le piccole note speziate vengono accompagnate da un plateau di frutti secchi come la prugna e il dattero, il tutto in totale sinergia alla terzialità di sentori, che confluiscono nel balsamico accompagnato dal ginger e dal tamarindo. Al sorso il bevante non tradisce: un volume ampio, ricco e fine si interseca ad una trama tannica ben definita e sferica, quasi forgiata nella sua eleganza durante il processo di affinamento subacqueo, dalle correnti armoniche, che hanno determinato il suo impreziosimento.

The bottles are stowed on the seabed of the Adriatic sea at a depth of 25/30 meters in stainless steel cages. Nature of the soil:
Area of the Romagna gypsum vein, medium-textured clayey soil rich in limestone and potassium. Exposure: south-west.

Vinification :
The grapes undergo a destemming-crushing and are left to ferment, at a controlled temperature (26-28C), in stainless steel tanks with maceration on the skins that lasts for 10 days. Then the wine is separated from the exhausted marc, and stored in the cellar until bottling..

Pairings :
Typical meditation wine, it goes well with first courses with meat sauce, grilled and stewed red meats and all game in general.
